Sweet potatoes are very similar to potatoes but with a higher concentration of vitamin E and fewer calories, they are ideal for low calorie regimens. They have a semi-sweet flavor and can be white or pink. There are many ways to prepare food with sweet potatoes and one of the tastiest is by roasting it.

✔️1 boiled small sweet potato
✔️1 large boiled egg, peeled and cut into quarters
✔️1 tomato, peeled and cut into cubes
✔️¼ cup of finely chopped purple cabbage
✔️¼ cup of finely chopped red onion
✔️1 teaspoon of coconut oil
✔️2 cups of lettuce washed and cut into small pieces
✔️½ cup of broccoli florets
✔️Salt and pepper to taste
Sweet mustard dressing:
✔️4 tablespoons olive oil
✔️1 honey spoonful.
✔️1 tablespoon Dijon mustard.
✔️1 tablespoon apple cider vinegar
✔️½ teaspoon finely chopped garlic.
✔️Salt and pepper to taste
How to prepare:
Peel and chop the sweet potato into cubes and sauté with the coconut oil, salt and pepper. On a plate, arrange a bed of lettuce and place on it the rest of the ingredients to your liking.
Mix all the ingredients of the dressing in a small bowl, stir vigorously and sprinkle on the salad. Enjoy!
